Beach House Beef Stew is a favorite meal on a rainy day

Lots of vegetables with a flavorful broth provide a hot meal that is healthy and  filling. It is a comfort food for me. Plus, once the prep work is done the crock pot does the rest. Find my recipe for Beach House Beef Stew below.

Beef stew is a regular meal when I stay at the Sea Anemone because I can prepare the veggies before I even leave home if I want. Pack a cooler in the car and final preparations are only minutes once you arrive for your vacation. Thus, you can run off for a few hours of play and come home to delicious hot beef stew. And, clean up is easy, too.

Root vegetables are basics in beef stew. Turnips, parsnips, carrots, potatoes and rutabaga are required. Most importantly, I never remove the peel because I want the nutrients and fiber they supply. A good scrub with a veggie brush is all that is needed.

I always start with a good cut of beef

I agree that beef marbled with fat makes the best stew and I sometimes select beef chuck. However, I have had luck with eye of round when cut into small pieces and browned well prior to putting into the crock pot, and it has less fat.

When I am really ambitious I make my own broth. Yup, I buy beef bones from my favorite butcher and go through the ritual of cooking them with herbs and other things  for about 24 hours. That process by far makes the best broth with my stew. Otherwise, I resort to boxed beef broth from the grocery store because it is simple and quick and does the trick.

Cutting vegetables is art therapy for me. First, I take my time slicing and dicing, thinking about how I want the piece to look in my bowl. What colors do I want to see? Rutabaga is not an attractive vegetable on the produce counter at the grocery store, but it cooks to a lovely yellow. Plus, it adds a unique taste to the stew.

Brussels sprouts and green beans bring interesting shapes and texture. Red peppers and yellow squash provide additional shots of color. Of course, color is not the only reason I select a particular vegetable. I enjoy eating all these vegetables I select, too.

The basics stay the same with my recipe for Beach House Beef Stew, but some of the vegetables and ingredients vary each time. Most of all, I find it fun to pick the ingredients for stew because there are so many vegetables to choose from.

Beach House Beef Stew

Ingredients

32 oz box Beef broth
3-4 tablespoons Better than Bouillon (beef flavor)
14.5 oz can tomato, diced (or diced fresh)
2 lbs beef, cut into small pieces
1 sweet onion, sliced
2 cloves garlic, diced
2 carrots, cut diagonally
1 turnip, cubed in bite size pieces
1 rutabaga, cubed in bite size pieces
1 parsnip, sliced either lengthwise or crosswise
10 Brussels sprouts, sliced or quartered
2 medium potatoes
1/2 red pepper, diced
1/2 green pepper, diced
1 small yellow squash, halved and sliced
1/2 cup sliced green beans
2 stalks celery, chopped (include some leafy ends)

Seasoning

salt to taste
pepper to taste
1 tablespoon fresh or dried parsley
1/2 teaspoon thyme
1 teaspoon rosemary

Directions

Turn crock pot on to low. Put broth, bouillon and canned tomatoes in crock pot and put lid on. Brown the stew meat and onion in a large pan and allow to simmer a few minutes in the juices. Drain and add to the crock pot, replacing lid. Add the hard root vegetables (carrots, rutabaga, parsnips, turnip) and Brussels sprouts. Add potatoes if you cut them in larger pieces. Keep lid securely on crock pot to hold heat. *Cook for 4 hours on low.

Add the soft vegetables, potatoes (if cut in small dices), seasonings and garlic. Cook on low another 2 hours or high for 1 hour. The trick is to keep the vegetables at the firmness level that you prefer. Soggy over-cooked will not do!

Other options:

handful of barley last half hour (or less)
1/2 cup lentils
1/2 cup cooked beans (kidney, pinto, black, black-eyed peas, garbanzo)
cauliflower (last hour)
zucchini (last hour)
broccoli (last hour)
mushrooms (last hour)
fennell
experiment with seasonings (basil, oregano, marjoram, celery seed, caraway seed, fennel seed, etc.)

*Crock pots differ in heating temps  – use your best judgment on timing
