Healthy lunch on your beach house vacation
I have gone on the no-holds-barred vacation where I consumed whatever foods I wanted. No calories when on vacation, right? Unfortunately my body doesn’t agree and I paid the price with weight gain to deal with upon returning home. And, it is difficult to break that nasty habit of eating whatever once the momentum gets going. Maybe you don’t have this problem with food; those of you who do know exactly what I am talking about. That is why I have a collection of healthy choices for meals when I stay at the Sea Anemone vacation home. This blog shares one version of my healthy Beach House Chicken Garden Salad.
Chicken is a healthy choice
Chicken has become a frequent meal at my house. There are endless ways to prepare and use chicken that is delicious and healthy. I like to bake enough chicken so that I have left overs for salad or soup. This plan works especially well when on vacation at a beach house. I don’t like spending time cooking when I can be out exploring tide pools or walking along the beach.
Baking chicken with herbs or sauce
I always place foil in the pan before I cook chicken so I don’t have a messy pan to scrub. I purchase skinless chicken breasts and always wash the meat before placing in the pan. Then, I select the seasoning or sauce with which I will bake the chicken. Often I sprinkle lemon pepper and maybe some rosemary. I love anything with rosemary and I use it often. I also enjoy finding homemade sauces at farmer’s markets. My latest discovery is Uncle Dan’s Asian Pear, Red Peppers, Thai Chilies, Ginger and Garlic sauce from Seme Family Foods in Longview, Washington. Truly wonderful on baked chicken. I bake chicken at about 425 degrees for 35 -45 minutes or until lightly browned.
Beach House Chicken Garden Salad
Salad greens mix
Zucchini – diced
Red onion -skinny strips
Mushrooms – quartered
1/8 cup beans (pinto, kidney, black, garbanzo, etc)
Olive oil and Balsamic vinegar
Sliced almonds or pumpkin seeds
Sliced baked chicken
Swiss cheese, sliced
Mix greens, veggies and beans together on a plate. Drizzle with oil and vinegar or use dressing of choice. Sprinkle sliced almonds or pumpkin seeds over salad. Add a few slices of cold baked chicken on the side along with a few strips of Swiss cheese! Wella! A tasty, filling and healthy salad.
Of course the veggie options are endless. Keep salads interesting by experimenting with various combinations, garnishes and toppings.
