Is chicken soup really good for the soul?
Good old fashioned chicken noodle soup is good for the soul. Didn’t someone say that once? Well, I must agree. It is also easy to cook from scratch. Chicken noodle soup satisfies the taste buds and fills you up with nutritious ingredients. Beachin’ Chicken Noodle Soup is a staple when I spend time at the Sea Anemone vacation beach house.
Cook for yourself when you rent a beach house
Renting a beach house is way more fun than staying at a motel. For one thing, you don’t have to drive anywhere or stand in line for food when you can just cook it up yourself in a well equipped kitchen. I know, not everyone likes spending time in front of a stove while on vacation, but this easy recipe is not time consuming and provides a good meal with plenty left over for later. Besides saving time driving and standing in line waiting at a restaurant, renting a beach house provides the pleasure of sitting in a cozy chair watching waves as you sip wonderfully delicious chicken noodle soup. And, you don’t even have to get dressed up!
Enjoy a hot bowl of soup after a day of exploring
I found this recipe years ago on allrecipes.com which was provided by someone named Sherry. Beachin’ Chicken Noodle Soup is what I call this recipe. Unfortunately, I am not gifted with the ability to make up good tasting recipes – but will always identify the source and give credit. I have made this recipe many times and always receive compliments from family and friends. It has proven to be an easy recipe when I don’t want to spend much time in the kitchen. Especially on a beach vacation when there are so many adventures at hand, but a hot bowl of Beachin’ Chicken Noodle Soup when you return home after a day of exploring is satisfying, well, for your soul.
Beachin’ Chicken Noodle Soup
4 cups chopped, cooked chicken meat (make in advance)
1 cup chopped celery
1/4 cup chopped carrots
1/4 cup chopped onion
1/4 cup butter
8 ounces egg noodles
12 cups water
3 1/2 tablespoons *Better than Bouillon (chicken flavor) – or, original recipe calls for 9 cubes chicken bouillon
1/2 teaspoon dried marjoram (I use oregano instead since I have this on hand)
1/2 teaspoon ground black pepper
1 bay leaf
1 tablespoon dried parsley
*I like Better than Bouillon because it has less sodium – doctor’s orders
- In a large stock pot, saute celery and onion in butter
- Add chicken, carrots, water, bouillon, marjoram/oregano, black pepper, bay leaf, and parsley. Simmer for 30 minutes.
- Add noodles, and simmer for 10 more minutes until noodles are andante (not soggy).
This makes a good quantity for 4-6 people to have hearty helpings.
