Top o’ the morning to you
St Patrick’s Day is a cultural celebration that I partake in heartily. Well, I am of Irish ancestry so the call to revelry is in my genes. Even if Irish isn’t in your genes I think you still might enjoy this tasty Mint Chocolate Shamrock Smoothie recipe that I discovered last year. And, it is healthy. Healthy and delicious in the same sentence you ask? Give it a try and decide for yourself.

Ingredients
MINT LAYER
3 frozen bananas
1 large handful spinach
1/8 tsp mint extract
1 cup non-dairy milk (I used vanilla soy)
STRAWBERRY LAYER
2 frozen bananas
1 cup frozen cauliflower
4 oz lemon yogurt
4 to 6 frozen strawberries (slightly thawed)
2 tbsp protein powder
1 cup non-dairy milk
TO SERVE (OPTIONAL)
1/4 cup chocolate chips
1/4 cup white chocolate chips
whipped cream
chocolate sprinkles to garnish
Instructions
- Melt the chocolate chips. Dip the rim of your jars/glasses into the melted chocolate and use a spoon to drizzle/drip more around the top. Coat the spoon in chocolate and shake it in the bottom of the jar to create the small chocolate splatters. Freeze for 5 minutes. Repeat with white chocolate.
- Blend each smoothie layer separately until very creamy.
- Layer into the decorated jars/glasses, with first layer filling about 1/3 the glass. Carefully add second layer. Top with whipped cream and chocolate sprinkles.
- Yum!
