What’s for Breakfast?
Mornings are a special time at the Sea Anemone. The view is great, the sound and smell of the ocean is refreshing, and a hot cup of coffee just hits the spot. One of the best reasons to rent a beach house is that you don’t have to change out of your pajamas, or drive your car, or wait in line to be served breakfast. What to cook while on vacation at the beach? With a little planning you are set to prepare simple and healthy (or not) meals without raising the stress level a bit.
Breakfast is proven to be beneficial
Eating breakfast is proven to be beneficial in controlling hunger throughout the day. A healthy breakfast also keeps blood sugar in check as you start your day. I grew up eating breakfast every day. If I miss breakfast I am grumpy and discombobulated all day, and I tend to overeat later in the day.
So, you might note the photo of a WAFFLE! Is that a healthy breakfast? Well, I know there are healthier choices out there, but sometimes waffles just call my name. You think that maybe the raspberries counteract the negative sugar load?
Betty’s waffle recipe
I don’t eat waffles often but they are such a treat to indulge in now and then when I stay at the beach. I use my mother-in-law’s recipe that I learned from her years ago. Enjoy!
1 cup flour
2 tbsp. sugar
1 tsp. baking powder
2 tbsp oil
3/4 c milk
Mix dry ingredients together. Mix egg, oil and milk into dry ingredients. Spray Pam on the waffle iron and heat. Pour 1/2 cup or so of batter onto the hot waffle iron, close and cook to a golden brown. Serve with desired toppings. Makes about 4 medium size waffles.
A brisk walk after breakfast helps keep you healthy
Fortunately the 804 trail is only a 2 minute walk from our house. It is fun and easy to work off some calories in case you indulged a bit for breakfast.
